A Low-Carb option for making a quick, easy and really tasty pizza.
Equipment: 1 baking tray that is long enough to fit a medium sized marrow lengthways

 ½ Marrow (medium sized, use half a marrow per person and cut lengthways into two portions)
 1 tbsp Tomato Purée
 1 Peppers
 1 Red Onion
 10 Cherry Tomatoes
 30 g Grated Cheese
 6 Shitake Mushrooms
 1 tbsp Olive Oil
 1 pinch Garlic Salt
 1 pinch Dried Oregano
 4 Strips of Bacon

1. Preheat the oven to 180°C (350°F) Gas Mark 4. Cut marrow lengthways and then lengthways again.
2. Place cut marrow into a baking tray, flesh side up.
3. Cook marrow for 10 minutes in the oven
4. Place the bacon under the grill and cook both sides
5. Gently fry the red onion mushrooms peppers and tomatoes in the olive oil while you are waiting
6. Take out the marrow and spread tomato purée onto the tops of the marrow and sprinkle on the garlic salt and oregano.
7. Place the cooked vegetables on top of the marrow.
8. Place the cooked bacon on top of the vegetables
9. Sprinkle the grated cheese on top of the bacon.
10. Place the baking tray into the oven and cook until the cheese has browned off on top.
11. Serve onto a plate
